Rainbow Vegetable and Tofu Skewers

These rainbow kebabs are PERFECT for a barbie...or if it's raining or freezing cold, they can also be cooked in the comfort of your kitchen :D

A mate of mine prepared these for dinner at her place one time, accompanied with satay sauce and her special home-made chili sauce. I became hooked and ended up cooking these every second week, seasoning with different flavours every time.

The options are endless, you can try mexican flavours, italian, thai, vietnamese, these days there are so many marinated tofu varieties available at the supermarket too.

So...my favourite colour is rainbow, which makes this meal so enjoyable to prepare. How can you not love looking at this!

If you're setting out to cook this, and you can't get a hold of yellow capsicums, marinate the tofu in some oil and turmeric to get the yellow colour.




 

Dietary Requirements:

This recipe can be tailored to suit a Low FODMAP diet by omitting the onion, garlic and mushrooms. Keep an eye on your quantities as most of these ingredients are acceptable in certain amounts.

It is also suitable for those with a lactose intolerance, and who are gluten free.

And those following a pescatarian, vegetarian and vegan diet can enjoy this great barbeque meal!



Rainbow Vegetable and Tofu Skewers

Prep Time: 30 mins

Cooking Time: 20 mins

Serves: 4

This bright and colourful dish is a perfect vegan and vegetarian option for a barbeque

Ingredients

For the skewers

  • 500g hard firm tofu, pressed dry with paper towel
  • 1 red capsicum
  • 1 yellow capsicum
  • 1 green capsicum
  • 1 zucchini
  • 1 eggplant
  • 10 mushrooms (omit for low FODMAP)
  • 1 large red onion (omit for low FODMAP)
  • BBQ wooden skewers

 

For the coating

  • 1/2 cup of olive oil
  • 1 tbsp of fresh parsley, finely chopped
  • 3 garlic cloves, crushed (omit for low FODMAP)
  • 1/2 tsp chili flakes
  • 1 tsp of paprika
  • salt + pepper

Method

  1. Whisk together the ingredients for the coating in a small bowl
  2. Soak wooden skewers in water
  3. Cut all the veggies and tofu into equal sizes and then assemble them on the skewers, alternating between all the veggies and the tofu
  4. Using a basting brush, cover the skewers in the coating
  5. Grill on the barbie for about 15-20 minutes, a bit of charring indicates the veggies and tofu are cooked through
