Spicy Roast Capsicum Dip

This spicy dip is great to enjoy with carrot or celery sticks and also makes a great addition to any fresh sandwich, wrap or roll.

It is featured in one of my favourite lunches to make... Check out this smoked salmon, spinach and spicy roast capsicum dip recipe.

I started making dips this year for the first time and I couldn't believe how easy it was! For the most part it's just

1) cut stuff

2) cook stuff

3) blend all the stuff!

And knowing how easy it is makes great opportunities to come up with different flavours, or customise them if you have specific dietary requirements. For example, if you wanted to make this a vegan dip, swap our the greek yogurt for cannellini beans. Or if you want to have it a bit more on the cheeky side, swap the yogurt out for cream cheese.

So many different exciting dip recipes to try out, I think I'll have to add dips to my weekly meal prep!

This recipe is suitable for those who are gluten free.

And those following a pescatarian and vegetarian diet, you can enjoy this healthy amazing dip on your next cheese platter!



Spicy Roast Capsicum Dip

Prep Time: 10 mins

Cooking Time: 20 mins

Serves: 4

This spicy dip is great to enjoy with carrot or celery sticks and also makes a great addition to any fresh sandwich, wrap or roll.

Ingredients

  • 2 medium sized capsicums – cut into 1-2cm chunks
  • 2 garlic cloves
  • 1/2 cup of greek yogurt
  • 2-3 small chillis, seeds removed (add more or less depending on your liking)
  • 10-15 basil leaves
  • lemon juice from 1 lemon slice
  • 1/2 tsp of paprika
  • drizzle of olive oil
  • salt and pepper

Method

  1. Preheat oven to 220°C and prepare an oven tray with baking paper
  2. Place capsicum chunks into a bowl and lightly drizzle with oil, and sprinkle with salt and pepper. Evenly spread over oven tray and roast for about 20 minutes or until slightly browned.
  3. Remove from oven and stand to cool
  4. Meanwhile place the remainder of the ingredients into the blender, and add a generous pinch of salt and pepper, add the capsicum.
  5. Blend and enjoy 🙂
