Pecan, Orange, Rocket and Spinach Salad with Currants

This fast and fresh salad is perfect with some grilled chicken, ocean trout, or tofu pieces.

All the ingredients are low FODMAP so long as you eat it in moderation! It is recommended up to 10 pecan halves are low FODMAP, so make sure you count your pecans.

If onion aren't a problem for you, red onion will also go nicely with this dish.




 

Dietary Requirements:

This quick and easy salad is suitable for most dietary requirements!

It is Low FODMAP - just keep an eye on how many currants you have.
It is of course suitable for those with a lactose intolerance, and who are gluten free.
And Rocket belongs to the Brassicaceae family, Spinach belongs to the Amaranthaceae family and therefore this recipe is nightshade free.
And those following a pescatarian, vegetarian and vegan diet can enjoy this delicious salad.



Pecan, Orange, Rocket and Spinach Salad with Currants

Prep Time: 10 mins

Cooking Time: 1 min

Serves: 4

A heathy side to go with any protein

Ingredients

  • 120g of rocket and spinach mix
  • 3 oranges
  • 1/2 cup of pecans
  • 3/4 cup of currants
  • 1 tbsp of apple cider vinegar
  • 2 tsp of olive oil
  • 1/2 tsp of turmeric

Method

  1. Whisk together olive oil, the juice of 1 orange, apple cider vinegar, and turmeric in a jar
  2. Roast pecans in a small fry pan for about a minute, allow to cool for about 5 mins
  3. While the pecans are cooling, peel the oranges and remove the pith. Cut into 2-3cm chunks.
  4. Combine the remaining ingredients and drizzle with the dressing!
