Apple, Walnut, Spinach and Feta Salad

Here's another fancy and nutritious salad to woo your friends. It's easy to make and goes well on the side of your meal or as a main itself.

I made this using some home-grown spinach as well! No better feeling than creating a dish using your own ingredients.

Although I specified Danish feta, you can use greek or any other type. I prefer to use Danish in this recipe as because it is a bit of a treat ingredient, it's good to use less of it, and the smooth creamy texture mixes through the salad more.

You can also substitute spinach with rocket, or a mix of both, and if you've got pecans instead of walnuts, go ahead and use them.

This deliciously healthy salad will go down a treat on the side of chicken, beef, tofu, or is fantastic on its own!




Dietary Requirements:

This recipe is suitable for those who are gluten free.
Spinach belongs to the Amaranthaceae family, and therefore is nightshade free.
And those following a pescatarian, or vegetarian diet can enjoy this healthy salad.



Apple, Walnut, Spinach and Feta Salad

Prep Time: 10 mins

Cooking Time: 2 mins

Serves: 4

A fancy salad to accompany any dish, or enjoyed on its own

Ingredients

Salad mix:

  • 120g of baby spinach
  • 3/4 cup of walnut halves
  • 1/4 cup of dried cranberries
  • 100g danish feta, crumbled
  • 1/4 of an apple of your choice, finely sliced
  • 1/4 of a red onion, finely sliced

 

Vinaigrette:

  • 1/4 cup of olive oil
  • 2 tbsp of balsamic vinegar
  • 2 tbsp of honey
  • 1 tsp of turmeric
  • 1 tsp of Dijon mustard
  • pinch of salt and pepper

Method

Step 1:
On a small pan, lightly toast the walnut halves over low heat, careful not to burn them. Remove from pan and cool for a moment

Step 2:
In a large bowl, combine all the salad ingredients, and toss around to allow the feta to break up and mix through.

Step 3:
In a small dish, combine the vinaigrette ingredients and whisk thoroughly

Step 4:
Add walnuts to the salad mix, drizzle vinaigrette over and toss through. And enjoy 🙂
